Matt Quinlin has spent over 20 years in the industry. When he and Koralee took over Meat Merchant in December 2019, they saw exactly what it could become - and have been building towards it ever since.
This isn't your average butcher, and that's deliberate. Alongside the best quality grass-fed and free-range cuts, the Casuarina shop stocks locally sourced cured meats, cheeses from around the world, organic local milk and honey, and a range of condiments - because great food doesn't start and end with the protein.
If barbecue and smoking is your thing, Matt's got you covered too - hand-picked rubs, artisan spices, and the supplies to take your cook to the next level. From fast weeknight dinners to the Sunday roast to the perfect smoke, Meat Merchant is Casuarina's locally owned, community-focused butcher and deli.
And while Matt's behind the block, Koz is in the kitchen - making homemade meals from scratch, in-store, every day. Her lasagne has become something of a local legend. The kind of thing people come in specifically for.
Every farm is vetted. Every cut is prepared in-house. Every delivery runs on a schedule built around freshness, not convenience. That's not changing as they grow. It's the whole point of growing.

That's not a limitation - it's the baseline. As Meat Merchant grows, the standard doesn't move. The reach does.
NSW deliveries run Monday, Wednesday and Friday. QLD runs Tuesday and Thursday. Fresh every time - no exceptions.
