Cooking tip for the best crackle: Preheat oven as hot as possible. Rub oil and salt over the skin, pat dry any excess oil, and roast for 30–40 minutes until the crackle bubbles. Reduce oven to 180°C and continue cooking until the meat is perfectly done.
